Garlic and Herb Garden Vinaigrette

1 clove garlic
about 4 tbs. of chopped fresh herbs of your choice (rosemary, tarragon, parsley, green onion, etc.)
salt and pepper to taste
1/2 tsp. Dijon mustard (optional, acts as a binding agent to help oil and vinegar mix)
1/4 cup part vinegar
3/4 cup olive oil
Peel garlic and mash it up in a mortar and pestle. Chop fresh herbs and add them to mortar and pestle, grinding garlic and herbs together. Enjoy the scent you are creating. Transfer mashed garlic and herbs to bowl and add mustard, vinegar, salt and pepper. Whisk thoroughly Slowly whisk in oil. Check for salt.
Enjoy on salads or use this dressing as a veggie spread to encourage kids to try new vegetables! Kids love this stuff!
