Rainbow Slaw Recipe

Did you know that SEEDS  intentionally plants outside the fenced garden areas for free public harvesting?  If you live in the area and aren’t sure what to fix for dinner, stop by SEEDS to see what’s growing.  Also, if you become a volunteer, you’ll get some free exercise, too.  

Right now there is a lot of cabbage growing at SEEDS.  Here’s a great recipe for eating cabbage fresh and raw.  This cole slaw is very colorful and delicious!

 

Vera’s Rainbow Slaw

3 cups of shredded cabbage

1 cup grated carrots

1 cup of mayo

½ cup of finely diced red onion

½ cup of finely diced red bell pepper

½ cup grated radish

½ cup chopped fresh parsley

½ cup dried cranberries

3 TBSP Apple Cider Vinegar

Juice of 1 lemon

½ tsp sea salt

½ tsp black pepper

1/8 tsp ground cayenne pepper

 

Combine all the ingredients and mix well. Serve immediately, or chill overnight.  This salad tastes even better the next day!  Enjoy!
